This method, known as "beating," required careful timing to ensure the olives were ripe but not overripe. After gathering, the olives were transported in baskets to be pressed. The olive groves were typically small, family-owned plots passed down through generations. Farmers relied on their deep knowledge of the land and trees, often working alongside family members during the harvest season. This intimate connection with the olive trees ensured that each harvest was conducted with great care and attention to detail.
2. Modern Harvesting Methods: Today, harvesting techniques have evolved significantly. In addition to mechanical harvesting, some producers employ "selective hand-picking," where only the best olives are chosen, ensuring the highest quality oil. This method is labour-intensive but results in superior oils, often reserved for extra virgin categories.
