Pressed from 100% Koroneiki — Greece's "queen of olives" — grown on century-old trees in the sun-baked groves of Sparta.

Pour it and you'll catch the first note straight away: a bright, grassy sharpness, like walking through the grove itself. Then the fruit comes through, ripe and rounded, before a peppery finish catches at the back of the throat, the mark of a truly fresh, high-polyphenol oil.

Cold-pressed within hours of harvest, never blended, single estate. What's in the can is exactly what came off the tree.

Koroneiki is the varietal — small-fruited, high-yielding, and prized across the Peloponnese for the intensity it packs into so little olive.

Ours comes from a single estate of century-old trees near Sparta, hand-harvested early in the season while the olives are still green. It's a deliberate trade-off: lower yield, but far greater concentration of flavour and polyphenols.

The olives are cold-pressed the same day, no waiting, no oxidation, so the oil goes straight from tree to tin at its peak.

Drizzle it generously over grilled vegetables, fresh burrata, or a bowl of hummus and watch it wake everything up. Stir it through soup just before serving, dress a simple tomato salad, or pour it over a slice of good sourdough (spout recommended — ask our customers). It can handle light sautéing if you need it to, but its real talent is finishing a dish, not disappearing into one.
