All four start from the same place: Greek Koroneiki, cold-pressed in Greece. The 500ml is early-harvest, picked green for that bright, peppery character. The three infused oils use a mature-harvest base instead — smoother and rounder, so the lemon, chilli, and truffle can each do their job without a sharp oil getting in the way.
