Souri olives are known for packing in exceptionally high polyphenol levels, and you taste it: a deep, earthy intensity that sits underneath the smoothness, giving this oil real substance rather than just softness.

Cold-pressed, single origin, never blended. A rare taste of land that's been producing olive oil for generations before us.

Souri is the varietal — ancient, hardy, and deeply rooted in Lebanese tradition, named for Tyre (Sour), the Phoenician port city nearby. It's prized for unusually high polyphenol content, which shows up as earthiness rather than the peppery sharpness you'd get elsewhere.

Ours comes from generational trees in Koura, groves passed down and tended for generations, which is part of why this oil is so limited. Harvested by hand and pressed the same day.

The scarcity isn't a marketing line, it's the reality of small-batch production from old, established trees rather than commercial-scale plantations.

Perfect for bread dipping, drizzled over labneh or hummus, or finishing a bowl of lentil soup. Its earthy depth makes it a natural match for grilled fish, roasted vegetables, or a simple plate of tomatoes and salt. Splash it into a manakish dough or over fresh za'atar for something closer to home.
