The Greek is Koroneiki, hand-harvested early from century-old trees near Sparta — grassy, fruity, with a peppery finish that's the mark of a young, high-polyphenol oil.

The Lebanese is Souri, from generational trees in Koura, one of the oldest olive-growing regions on earth — smooth and earthy, with the same high polyphenol content but a completely different character.

The Truffle starts from a mature-harvest Koroneiki base, smoother and rounder, built specifically to carry real black truffle extract without competing with it.
